MEATLOAF FLORENTINE

2 lb. ground beef
1 lg. onion, diced
1 c. bread crumbs
1 med. green pepper, diced
2 eggs
1/2 c. milk
6-8 slices bavarian ham
6-8 slices Mozzarella cheese
1 pkg. frozen chopped spinach, thawed
1 jar prepared spaghetti sauce

Preheat oven to 350 degrees. Mix together ground beef, onion, bread crumbs, green pepper, eggs, and milk. Roll meat mixture out flat on a floured surface approximately 1/2 inch thick.

Wring excess water form spinach and sprinkle on top of meat. Add layer of cheese. Add layer of ham. Roll mixture together like a jelly roll. Place in glass roasting pan with seam down. After one hour add spaghetti sauce over top of meatloaf. Cook another 15 minutes.

how long do i cook a two pound meatloaf

25 minutes is NOT long enough to bake a 2 pound meatloaf! It won't be done inside! I bake mine for atleast 70 minutes. You can put foil when you think it needs it to prevent burning on top. I usually put it on after 35 or so minutes. Bake at 350 F/175 C.

1 pound ground chuck, 10 slices bacon, cooked and crumbled, 1 (8-ounce) package sharp Cheddar, grated, 2 large eggs, lightly beaten, 1/4 cup bread crumbs, toasted, 1/4 cup mayonnaise, 1 tablespoon Worcestershire sauce, 1/4 teaspoon salt, 1/4 teaspoon ground black pepper, 1/3 cup ketchup, 2 tablespoons prepared mustard, 1 (3-ounce) can French fried onion

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and the next 8 ingredients, mixing well.
In a small bowl, combine the ketchup and the mustard. Stir 1/4 cup of the ketchup mixture into the meat mixture, reserving the remaining ketchup mixture. Press the meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread the remaining ketchup mixture over the loaf and bake for 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

MEATLOAF FAMILY STYLE

3 lbs. ground chuck, 1 1/2 to 2 c. uncooked Minute Rice, 1/4 c. barbecue sauce, 2 eggs, 2 shakes of salt, 1 or 2 lbs. carrots

Mix all together, except carrots. Shape into loaf and place in roasting pan. Clean carrots, put around meat loaf. Add a little water to pan. Cook at 350 degrees, covered for 1 hour and 45 minutes. Put sauce down center of meatloaf. Cook 15 minutes uncovered. Serves 6.

MEATLOAF FLORENTINE

1 1/2 lbs. ground beef or meatloaf mix, 2 c. frozen spinach, defrost, squeeze, and drain, 1/2 c. bread crumbs, 8 oz. grated Cheddar cheese, 2 eggs, 1/4 c. Parmesan cheese, Salt and pepper to taste

Blend all ingredients, reserving 1/2 cup of Cheddar cheese. Form into 2 loaves. Sprinkle reserved cheese over top. Bake for 1 hour at 375 degrees. Pour brown gravy over top for last 15 minutes of baking to moisten.

MEATLOAF DELIGHT

4 lb. chopped meat, 2 eggs, 1/4 c. cold water, 1/2 c. ketchup, 1/2 c. seasoned croutons, 1/2 c. orange or duck sauce, Garlic powder to taste

Mix first 5 ingredients. Place in rectangle pan. Cover with glaze. Bake at 350 degrees for 45 minutes. Drain off any fat.

MEATLOAF DELUXE

2 eggs, 1/4 c. chopped parsley, 1/2 c. milk, 1/4 c. finely chopped onion, 1 1/2 tsp. salt, 1 tsp. dried thyme leaves, 1/8 tsp. nutmeg
Dash of pepper, 1 1/2 c. soft white bread crumbs, 2 lb. ground chuck, 1/2 lb. ground pork

MASHED POTATO TOPPING:

8 med. potatoes (about 2 1/2 lb.), 1 tsp. salt, 1/2 c. milk, 1/4 c. butter, 1/8 tsp. white pepper, Dash cayenne, 2 egg yolks, Parsley sprigs

Preheat oven to 350 degrees. In large bowl beat 2 eggs with 1/2 cup milk, 1 1/2 teaspoon salt, the thyme, nutmeg and pepper. Stir in bread crumbs. Let mixture stand 5 minutes. Add ground meats, chopped parsley and onion. Mix lightly with fork until well combined. Grease a 9 x 5 x 2 3/4 inch loaf pan. Pack in meatloaf mixture. Bake 60 minutes. Make mashed potato topping. Pare potatoes cut in quarters. Cook in 1 inch boiling water with 1 teaspoon salt. Cover until tender 20 minutes. Drain well, return to saucepan. Beat with portable electric mixer or mash with potato masher until smooth. Heat slowly stirring over low heat to dry out about 5 minutes. In saucepan, heat milk and butter until butter melts, don't let milk boil. Gradually beat hot milk mixture into potatoes until potatoes are smooth, light and fluffy. Beat in white pepper, cayenne and egg yolks. Remove meat loaf from oven. Swirl mashed potatoes evenly over entire surface. Return to oven, bake until potato topping is slightly golden. Serve garnished with parsley. Makes 10 servings.
